In recent years, disasters on a scale seen once every several decades have been occurring almost annually. Furthermore, amidst global inflation, the situation surrounding food service, particularly regarding procurement, is becoming more severe year by year.
When aiming to open a restaurant, we considered creating a burger that would be resilient to disasters and price fluctuations, and that we could offer at the lowest possible price.
Therefore, we established the following rules for developing our new menu.
And after much trial and error, Mametto Burger was completed, and Mametto Burgers started in October 2023.
Since the opening of Mametto Burgers, we have had many customers visit us, and we have learned a great deal. One particularly significant discovery was that there are surprisingly many people who are not vegan but cannot eat meat. We also learned that some individuals cannot eat hamburgers due to milk and egg allergies. We realized that Mametto Burger was helping more people than we had initially imagined.
And from 2024, to make our burgers even more delicious, we added the following rules and began developing a new Mametto Burger.
Following approximately one year of research and development, we finally completed the new Mametto Burger in January 2025, which met all of our requirements. Because it can now be stored at room temperature, we can handle it in the same way as lunch boxes, so we began placing them in sales locations within Sapporo City starting in February 2025.
Traditional regional cuisine is the result of years of innovation and effort to make the most delicious use of ingredients found in that specific area. Just like local cuisine, we aspire to evolve Mametto Burger, making it even tastier by creatively utilizing local agricultural produce and our own ingenuity.
As of May 2025, our physical store is not currently operating.
We hope to reopen a physical store in the future and are continuously searching for a suitable property. However, finding a location that perfectly meets our needs has proven challenging.
While we continue our property search at a steady pace, our current focus is on several key areas:
These include testing our packaging at Wakuwaku Hiroba, reviewing our manufacturing process, and developing new products. Through these efforts, we are gradually working to increase recognition for Mamet Burger.
Our immediate priority, as a crucial first step, is to achieve our ideal packaging. This involves several key considerations:
We appreciate your continued support and please look forward to our future developments.
Mametto Burger contains no animal ingredients or alcohol and is made with locally sourced and common ingredients deliciously crafted with our proprietary technique.
The buns are crafted with Hokkaido wheat and whole rye flour, creating buns that offer a delicate sour note and a robust wheat scent. Made exclusively from plant-based ingredients, they are completely free of eggs and butter.

Our original patty is based on beans and mushrooms. Bringing out the bean flavor and the mushroom umami, it has a fragrant and firm texture, delivering a simple yet intense savory taste. We use no soy meat or similar substitutes, relying solely on readily available ingredients, and it's carefully crafted with time and effort.

Produce | Per Mametto Burger | Characteristic | Main Nutritional Information |
---|---|---|---|
Soybeans | 21 | The soybeans in the Mametto Burger come in two forms: finely ground and whole. The cooking liquid from both is kept; we use a portion in the mayonnaise and the rest is mixed into the patty. | Protein, Fat, Carbohydrate, Vitamins, Isoflavones, Lecithin |
Adzuki beans | 12 | At Mametto Burger, we use the skin and cooking liquid of adzuki beans as they are, so our burgers are packed with powerful antioxidants such as polyphenols and saponins. | Dietary Fiber, Potassium, Iron, Zinc, Polyphenols, Saponins |
Mushrooms | 28 | Mametto Burger contains three types of mushrooms: eringi, maitake, and shimeji. These mushrooms are low in calories and high in dietary fiber, and beta-glucans, abundant in these varieties, are said to have immune-boosting effects. | Dietary Fiber, Vitamin B group, Vitamin D, Potassium, Beta-glucan |
Banana | 15 | The patty of the Mametto Burger contains approximately 15g of banana. While its numerous health benefits are well-known, heating it brings out a unique sweetness and aroma, making the patty even more flavorful. | Carbohydrate, Dietary Fiber, Potassium, Vitamin B group, Vitamin C, Magnesium, Tryptophan, Polyphenols |
Whole grain rye | 4 | The buns for the Mametto Burger contain 10% whole rye flour, and its unique sourness and chewy texture bring out the savory flavor of the buns. | Dietary Fiber, Vitamin B group, Minerals, Polyphenols |
Beet sugar | 3 | The sugar used in Mametto Burger is exclusively beet sugar. Because the oligosaccharides in beet sugar feed beneficial gut bacteria, thus helping to improve the gut environment. | Oligosaccharides, Minerals |
Pure apple cider vinegar | 1.2 | The vinegar used in Mametto Burger's mayonnaise is 100% pure apple cider vinegar. In addition to its refreshing apple flavor, it is also alcohol-free, making it suitable for halal diets. | Acetic acid, Potassium, Polyphenols, Pectin, Minerals |
Cabbage | 12 | In Mametto Burger, the cabbage is pickled and then combined with mayonnaise to create our coleslaw. Because there's hardly any heating involved, this helps retain most of the vitamins and other nutrients when you eat it. | Vitamin C, Vitamin K, Vitamin U (Cabbage juice factor), Dietary Fiber, Potassium, Folate, Calcium |
Others | --- | In addition to the ingredients mentioned above, we also use ingredients such as ginger, garlic, bread flour, cake flour, potato starch, lemon juice, canola oil, rice bran oil, tomatoes, onions, apple juice, cornstarch, and pure rice vinegar. |
