Food service for a new era
In recent years, disasters on a scale seen once every several decades have been occurring almost annually.
Furthermore, amidst global inflation, the situation surrounding food service, particularly regarding procurement, is becoming more severe year by year.
When aiming to open a restaurant, we considered creating a burger that would be resilient to disasters and price fluctuations, and that we could offer at the lowest possible price.
Therefore, we established the following rules for developing our new menu.
- The ingredients used will primarily be those readily available at mid-sized supermarkets.
- We will use ingredients with stable prices throughout the year.
- We aim for local production for local consumption to reduce food mileage and keep prices down.
- We will avoid using allergenic ingredients as much as possible.
- Our goal is to create a menu that can be enjoyed by as many people as possible, including those who are vegan or halal.
- We aim to create food that is delicious and makes people want to eat it again.
And after much trial and error, Mametto Burger was completed, and Mametto Burgers started in October 2023.
So that more people can enjoy our burgers
Since the opening of Mametto Burgers, we have had many customers visit us, and we have learned a great deal. One particularly significant discovery was that there are surprisingly many people who are not vegan but cannot eat meat. We also learned that some individuals cannot eat hamburgers due to milk and egg allergies. We realized that Mametto Burger was helping more people than we had initially imagined.
And from 2024, to make our burgers even more delicious, we added the following rules and began developing a new Mametto Burger.
- It can be enjoyed even after being left at room temperature for several hours.
- We're making it a plain flavor so that various variations can be considered in the future.
Following approximately one year of research and development, we finally completed the new Mametto Burger in January 2025, which met all of our requirements. Because it can now be stored at room temperature, we can handle it in the same way as lunch boxes, so we began placing them in sales locations within Sapporo City starting in February 2025.
Evolving like a local dish.
Traditional regional cuisine is the result of years of innovation and effort to make the most delicious use of ingredients found in that specific area.
Just like local cuisine, we aspire to evolve Mametto Burger, making it even tastier by creatively utilizing local agricultural produce and our own ingenuity.
Future Developments
As of May 2025, our physical store is not currently operating.
We hope to reopen a physical store in the future and are continuously searching for a suitable property. However, finding a location that perfectly meets our needs has proven challenging.
While we continue our property search at a steady pace, our current focus is on several key areas:
These include testing our packaging at Wakuwaku Hiroba, reviewing our manufacturing process, and developing new products. Through these efforts, we are gradually working to increase recognition for Mamet Burger.
Our immediate priority, as a crucial first step, is to achieve our ideal packaging. This involves several key considerations:
- Minimizing waste and bulk by avoiding container-type packaging.
- Ensuring that waste is limited to recyclable paper and plastic containers.
- Making it immediately clear that the product is made entirely from plant-based materials.
- Creating attractive packaging that entices customers to make a purchase.
